It likely means that clues to how careful or good the carpenter is may be had by studying the size and type of wood shavings he leaves behind after his work. A good one presumably leaves many small ones at the end that suggest delecate and patient joining to make a perfect fit.

A good carpenter is one that is not wasting wood, therefore you won't find many wood chips around his working place.
